My bootcampers often ask me for quick meal suggestions that don’t require hours of prep and are easy to take to work, or eat on the go. This recipe is undoubtedly the answer! A satisfying sandwich that includes something meaty is often high in saturated fat and topped with calorie-rich dressings. So I’ve taken apart the elements we crave in a hearty sandwich and I’ve put them back together in a light, healthy and satisfying way. Indeed, this Corsican wrap brings you the deliciousness of ham and cheese whilst still retaining a lightness that will leave you feeling great after lunch.
The ingredients all bear a Corsican stamp: olives, sheep’s cheese, cured ham…a true Mediterranean delight! This recipe is also ideal for a party appetizer, or a family Sunday brunch.
Alright, let’s do it…my Corsican Wrap!
Ingredients:
- 1 wholewheat or gluten-free wrap
- Salad greens of your choice
- 2 slices prosciutto
- 3 slices sheep’s cheese
- 2-3 tbsp soyonnaise
- 5 pitted black olives
- Balsamic vinegar
