This is a delicious gourmet and healthy recipe perfect as a festive canape or a starter that comes to us straight from Russia.
Ingredients for a dozen small Blinis?:
- 150g (1 & 1/4 cups) buckwheat flour
- 100g (3/4 cup) corn flour
- 5g baker’s yeast (1 sachet)
- 60 cl (2&1/2 cups) skimmed or non dairy milk
- 2 pinch salt
- 3 eggs
- oil
Garnish:
- Fish roe (trout, salmon, lump, sturgeon, pike…)
- Creme fraiche or dairy free alternative (must be thick)
- Lemon
Steps: ?
- Dilute the yeast in a glass of lukewarm milk and let it develop for 10 minutes.
- Separate the egg whites from the yolks, reserve the whites in the fridge and gently mix the yolks with the yeast
- In a mixing bowl, mix both flours, add a pinch salt and make well in the centre.
- Pour in the egg yolks and yeast slowly, add the rest of the milk mixing continuously until the batter is smooth and homogenous.
- Let the batter rest for 2 hours at room temperature.
- Beat the egg whites with the other pinch of salt until stiff. Gently fold them into the rest of the batter.
- Cook your blinis on medium heat in an oiled blini pan
