Yoohooo… who wants a yummy “sweet” cake but WITHOUT sugar?
Super easy to make (really fail-proof), yummy and without impact on blood sugar (therefore perfect for diabetics) and compatible with my Keto Smart program, and all phases of my online weight loss coaching program LeBootCamp.com
4 eggs or vegan equivalent (I use Bob’s Mills egg replacer)
½ cup of monk fruit, erythritol, or stevia (to your tastes)
1 tsp of vanilla extract
2 tbsp of coconut oil. You can also use avocado oil (tasteless) or almond oil
2 cups of the finest possible almond powder
1 tsp baking powder
4 tbsp slivered almonds
1 pinch of Himalayan salt
Preheat the oven to 160C / 320F.
Line a cake pan with parchment paper (or muffin baking cups)
In a large bowl, whisk the sweetener, eggs or their vegan version, salt, oil and vanilla for 30 seconds.
Add the almond powder and baking powder and mix until combined.
Transfer the mixture to the cake pan.
Cook for about 25 minutes. If your oven is not very powerful, add 5-10 min. A toothpick dipped in the center should come out almost clean.
Leave to cool for at least 1 hour.
