A yummy, vegetarian recipe that’s compatible with the Attack and Balance phases of LeBootCamp weight loss program!
Ingredients
- 1/2 cup all-purpose flour (gluten free version ok)
- 1/4 cup buckwheat flour
- 1 egg
- 1/2 packet yeast (1 tsp)
- 1 cup skim milk or mylk
- Salt
Steps
- Heat half of the milk and combine it with the yeast in a small bowl.
- In a blender combine the yeast-milk mixture, and the remaining cold milk.
- Separate the egg white from the yolk. Add the yolk to the mixture and pulse for 2 minutes.
- Add both flours (a little bit at a time) and a pinch of salt
- Let the dough rise in a warm place for 30 minutes until it has increased in volume (it should have bubbles breaking the surface, and be stringy when scooped).
- Whisk the egg white until stiff, but not dry, and fold it into the dough.
- Heat a greased pancake skillet or regular non-stick skillet. Pour some batter into the pan (size of a pancake).
- Cook for a minute or so, or until bubbles form and break. Turn over and cook for another 30 seconds. Remove blini from heat, cover and keep warm.
- Repeat with remaining batter until finished.
These blinis are “neutral”, neither sweet nor savory. You can thus serve them however you wish: With apple sauce, with seasonal berries, with smoked salmon, instead of bread, etc….
