Happy Valentine’s Day! There’s no time like today to share one of my fave LeBootCamp recipes: Garlic Shrimp with Zucchini Noodles.
Low in fat and high in protein, shrimp brings omega-3’s, iron, zinc and iodine, making it not only a nutritional powerhouse, but also a natural aphrodisiac. The zucchini noodles, rich in antioxidants and low in carbs are simply the very best pasta-alternative in the world!
And whether or not you’re sold on aphrodisiac properties in food (test this recipe & let me know!), this dish promises to make your Valentine’s dinner a beauty either way…so let’s get cooking!
Garlic Shrimp with Zucchini Noodles
Ingredients for 2:
- 2 medium zucchinis, washed
- 300g shrimp, peeled & deveined
- A handful of cherry tomatoes, halved
- 2 tbsp olive oil
- 1 lemon, juice & zest
- 3 cloves of garlic, peeled
- Salt & pepper
- Fresh parsley or cilantro
Directions:
- Spiralize the zucchini.
- In a skillet over medium heat, add the olive oil, garlic cloves, lemon juice and lemon zest.
- Once the pan is hot, add the shrimp and cook them for a few minutes on each side.
- Add the zucchini noodles and cook for a few minutes until slightly tender. Stir regularly and gently, preferably with spaghetti tongs.
- Remove from heat and season with salt & pepper.
- Top with the cherry tomatoes and and parsley/cilantro if desired.
- Serve right away!
