When I first shared this delicious gluten-free pizza dough on my Instagram, I got positively bombarded with messages begging for the recipe ;). Now, pizza is one of those foods that we automatically think is a no-no when we adopt a healthy lifestyle. But you know me – nothing is a no-no! When you’re a food lover, you find a way to make every delicious thing work. And the good news is that when we select healthier ingredients in creating our favorite foods, the final product is actually so much more tasty! Try it for yourself, and let me know what you think :).
Low-Carb Gluten-Free Gourmet Pizza Dough
Enjoy without moderation (or almost;)!
Ingredients for 8 slices:
- 1 large egg
- 1/4 cup of water
- 1 tablespoon virgin olive oil
- 1.5 cups fine almond flour
- 1/2 cup grated parmesan cheese
- 1/2 tsp baking powder
- 1/2 tsp xylitol
- 3/4 tsp oregano (optional)
- 3/4 tsp basil (optional)
Directions:
- Preheat oven to 375°F / 190°C.
- Mix all the liquid ingredients in a small bowl (egg, water, oil). Set aside.
- In another bowl, combine the dry ingredients. Then add the liquid mixture and mix to obtain a thick paste.
- Grease two sheets of baking paper and roll the dough between the two sheets to form a circle of thin dough or whatever your desired shape pizza :).
- Bake for 20-25 minutes in hot oven (heat from below) at 375°F / 190°C until edges are golden and crisp.
- Cool for at least 20 minutes.
- Add your favorite pizza ingredients: tomato sauce, pesto, parmesan cheese, chopped figs, arugula, herbs – the sky’s the limit – and then put in the oven on grill mode for a few minutes to melt the cheese. Keep an eye on it as grill tends to cook quite quickly ;)!
- Enjoy right away. Note, this pizza dough can be baked in advance for later use as it freezes very well!
