You asked me, so here it is: The real Viking bread recipe, not the modified, adapted and modernized version.
This recipe comes from a research historian specializing in Viking culture. Be careful, there are different Viking bread recipes because of different periods in time: with butter, bacon, flax seeds, etc.
The result is quite firm with a crust that holds together well. Big success at home where the whole family threw themselves on it!
This recipe is not Keto Smart, Detox, or Booster compatible. On the other hand, it is compatible in Balance and a smaller amount in Attack.
Ingredients
- 360 g (2 7/8 cups) wholemeal flour
- 250 g (2 cups) standard flour
- 1 teaspoon baking powder (or yeast) (if you want it more oxygenated, i.e with more air inside, use 1 tbs of yeast/baking powder)
- 1 teaspoon sea salt
- 500 ml (2 cups) of water
- 70 g (1 cup) oatmeal
- 30 g (1/2 cup) oatmeal to sprinkle on
Steps
- Mix all the dry ingredients. Then add the water slowly,
- Mix with a wooden spoon until you can no longer mix becomes it becomes too difficult,
- Knead the dough until the flour is well incorporated,
- Form a flattened ball. Sprinkle the oatmeal over it,
- Place the ball on a pizza / bread stone or if you do not have one, on a baking sheet with parchment paper,
- Put in the oven (COLD, no preheated),
- Turn on the oven to 190 ° C (375F) and cook for 1 hour.
- Remove the bread from the oven, let it cool a bit and attack it like a Viking!
