This delicious recipe is packed with health benefits and makes for a very pretty holiday appetizer!
Salmon is rich in Omega-3’s (good for our cardiovascular system) and protein (good for our muscles).
Caviar and all fish eggs are rich in vitamin B12 which is excellent for fighting winter fatigue.
Ingredients for 6 people:
- 1 puff pastry sheet
- 4 thin slices of smoked salmon
- 2 handfuls of grated mozzarella (important: do not use another cheese with a strong flavor)
- 4 tbsp crème fraîche
- 3 tbsp. lumpfish roe
- 1 egg
Directions:
- Preheat the oven to 356°F (180°C).
- Place the puff pastry on your kitchen countertop or workbench.
- Sprinkle the mozzarella over the entire puff pastry.
- Place the slices of salmon top.
- Gently roll up the pastry and firmly close in all the ingredients.
- Wrap the roll tightly in plastic wrap.
- Place in the freezer for 20 minutes.
- Remove from freezer, unwrap, and cut into slices about a quarter inch thin.
- Carefully place the slices on a baking tray lined with parchment paper.
- Beat the egg and then brush on the puff pastry (this will give your pastry a nice golden sheen).
- Bake for 10 minutes. Keep an eye on the puff pastry and remove as soon as it begins to brown.
- Let cool.
- Whip the crème fraiche and set aside.
- When ready to serve, top with the crème fraiche and lumpfish caviar.
