– 2 cups milk (vegan ok)⠀
– 2 eggs + 1 yolk⠀
– 1 cup T65 flour⠀
– 2 tsp stevia, monk fruit or any other healthy sweetener (to your taste really)⠀
– 2 tbsp gold rhum ⠀
– 1 vanilla pod ⠀

Steps⠀
⠀
1. Bring milk + vanilla pod + half the sweetener to a boil.⠀
2. While this is happening, bat eggs + yolk until they are foamy.
3. Then add second half of sweetener.⠀
4. Add warm milk + flour.
5. Band well then leave for 24 h, covered, in the fridge.⠀
6. Add rhum, blend well and transfer into canelé molds. ⠀
7. Bake for 45 min at 200C/390F.⠀
