Cinnamon Porridge
Ingredients:
- 1 volume buckwheat groats or kasha
- 1,5 volume almond milk
- 1 tsp cinnamon
- 1 tbsp coconut sugar
- Berries or seasonal fresh fruit
Steps
- Heat up the almond milk with the cinnamon and sugar on medium heat.
- Add the buckwheat and cook according to instructions on the packet.
- Once cooked, pour into a bowl, add the fresh fruit

Buckwheat crepes
Ingredients (for 2):
- 40 g (? cup) buckwheat flour
- 40 g (? cup) gluten free flour (rice, quinoa, blend, etc.)
- 125 ml (½ cup) water + 125 ml (½ cup) unsweetened non dairy milk of our choice (for savoury pancakes) de lait végétal nature (pour des crêpes salées)
- or
- 250 ml (1 cup) vanilla non dairy milk (almond, rice, coconut, hemp, etc.)
- A pinch of salt.
Steps
- Put the flour and salt in a large mixing bowl, add the liquid.
- Mix well until you have a homogenous batter.
- Heat up a crepe pan and pour a ladle of batter and cook for 2-3 minutes on one side.
- Flip and cook the other side.
Buckwheat pancakes
Ingredients (for 10 pancakes)
- 125g (1 cup) buckwheat flour
- 2 egg whites
- 2 tsp baking powder
- 18 cl (¾ cup) semi skimmed or almond milk
- 2 tbsp honey
- 20g (1.3 tbsp) almond butter
- 2 tsp cinnamon
- 1 tbsp lemon juice
Steps
- In a large mixing bowl mix the buckwheat flour and the baking powder.
- Add the egg whites and the flour, mix well.
- Add the honey, almond butter, cinnamon and the lemon juice and mix until homogenous.
- Heat up a pancake pan, pour in a ladle of batter and cook until little bubbles form on the surface.
- Turn it over and cook the other side.
- Enjoy with maple syrup, honey or homemade jam.
