This original, dairy-free recipe is the perfect fix for your sweet cravings!
Ingredients:
- 1.5 cups raw cashews, soaked for 4-6 hours
- 1 cup dairy-free milk (unsweetened almond, light coconut or rice)
- 3 tbsp olive oil
- 3/4 cup unsweetened pumpkin puree
- 1/4 cup maple syrup
- 1/4 cup + 2 tbsp brown sugar
- 1.5 tsp pure vanilla extract
- 1/4 tsp sea salt
- 1.5 tsp pumpkin pie spice
- 3/4 tsp ground cinnamon
Directions:
Blend all the ingredients together and then transfer into your ice-cream maker for approximately 45 mins or according to the machine’s instructions.
