I love pumpkin! Hence this special post with three of my fave recipes using pumpkin as the main ingredient.
If you love this soup like I do just double the ingredients and freeze half of the soup. Nothing beats being ready with a healthy choice in the freezer when you have a craving for something yummy.
Appetizer Suggestion: Creamy Pumpkin Soup
Ingredients for 6
- 2.5 lbs pumpkin
- 1 garlic clove
- 2 shallots
- 4 cups organic chicken or vegetable broth (or more to cover the pumpkin cubes)
- 1 tablespoon soy cream
- 1 teaspoon chopped parsley
Directions
- Peel and seed the pumpkin. Cut it into large chunks.
- Peel the shallots and garlic.
- In a stockpot, place the pumpkin chunks, shallots and garlic.
- Add the chicken or vegetable broth and cook for 20 mins over medium heat.
- Purée until smooth in a blender or food processor.
- Serve in shallow soup bowls, top with a tablespoon of soy cream, some chopped parsley and enjoy!
Entrée Suggestion: Pumpkin Gratin
Ingredients for 4
- 2.2 lbs (1kg) pumpkin or butternut squash, cut into large chunks
- 2 eggs
- 2 tbsp light cream or soy cream
- Parmesan, Gruyere or Mozzarella cheese
- A little cinnamon & ginger (optional)
- Salt, pepper
Directions
- Preheat your oven to 410°F (210°C).
- Steam the pumpkin for 20 minutes in a steamer.
- Transfer to a bowl and crush with a fork.
- In a separate bowl, beat the eggs. Add the eggs to the pumpkin, and then add the cream. Mix well.
- Season with salt, pepper, and cinnamon or ginger if desired.
- Place the mixture in a greased gratin dish and sprinkle with cheese of your choice.
- Bake for 10 to 15 minutes, until the top is bubbly and golden.
- Serve hot!
Dessert Suggestion: Pumpkin Ice-Cream
Ingredients for 6
- 1.5 cups raw cashews, soaked for 4-6 hours
- 1 cup dairy-free milk (unsweetened almond, light coconut or rice)
- 3 tbsp olive oil
- 3/4 cup unsweetened pumpkin puree
- 1/4 cup maple syrup
- 1/4 cup + 2 tbsp brown sugar
- 1.5 tsp pure vanilla extract
- 1/4 tsp sea salt
- 1.5 tsp pumpkin pie spice
- 3/4 tsp ground cinnamon
Directions
- Blend all the ingredients together and then transfer into your ice-cream maker for approximately 45 mins or according to the machine’s instructions.
