OMG! That’s the word that came to mind when I worked on this recipe…..because let’s face it, even if we know that sugar is not great for us we (well, I) still love our sweets!
So when you find the right ingredients to make Keto caramel, wow and re-wow!
Ingredients
- 1/4 cup salted grass-fed butter (organic is preferred)
- 1/2 cup heavy whipping cream (again, go organic)
- 1/3 xylitol (your choice of sweetness level as you can go up to 1/2 cup)
- 1/4 ts sea salt (I go for the pink version)
- 1 ts blackstrap molasses (optional but I find it makes a big difference in texture and color)
Steps
- Simmer butter in a small saucepan over medium/low heat, stirring regularly, until fully browned (about 5 minutes). Add in the heavy cream, sweetener, and salt, stirring until fully combined. Add in the molasses (if you are using them), and stir briefly until just combined.
- Simmer over very low heat for 15 minutes (don’t stir at all! I know it’s tempting to do so but please resist!).
- Adjust sweetness level if necessary and pour into a glass container. Your caramel should be sticky and thick, but still totally pourable like the regular thing.
- Use warm on vanilla ice cream (yum) or allow to cool completely, and refrigerate for roughly a week. The caramel will thicken up in the fridge (totally normal), so either bring it back to room temperature or heat it up with a little more heavy cream to thin it out a bit (3 min over low heat should be enough).
Secret from the kitchen: If your caramel splits (which can happen if you got tempted to use high temperature when I specifically said “very low”), you might still be able to save it. Remove it from the heat, let the mixture cool down for about 10 minutes. Put it over low heat, and gently whisk in a tablespoon of water until it comes back together (should happen almost instantly).
