A lip-smacking keto cake recipe for you! This French Almond delight is made with erythritol, a healthy sweetener alternative that does not raise your blood sugar levels, as well as almond flour to keep the indulgence 100% keto-friendly.
You know it: white sugar is the enemy, transforming into fat, and showing up as love handles and extra belly fat. But that doesn’t mean no treats!

I’ve made this keto cake recipe countless times and it’s always a success. If you bake often, you can also create a variety of cake flavors, by adding finely grated orange or lemon zest :).
Ingredients (serves 10-12):
- 3 cups ground almond flour
- ½ cup powdered erythritol
- ½ cup soft butter or melted coconut oil
- 1/3 cup unsweetened almond milk (homemade or store-bought)
- 3 eggs (room-temp), beaten
- 2 tsp yeast
- 2 tsp pure almond extract
- 1 tsp natural vanilla extract
- 1/4 teaspoon salt
- Optional for decoration: ⅓ cup slivered almonds
- Optional for “icing sugar”: 3 tbsp powdered erythritol
Directions:
- Preheat oven to 320°F / 160°C.
- Grease a round cake pan with butter or coconut oil. Add a circle of parchment paper to the bottom of the pan and also grease the paper. Set aside.
- Melt the 1/2 cup butter or coconut oil. Let cool slightly so that you can fold it into the mixture when warm.
- In a bowl, beat the eggs, erythritol powder, unsweetened almond milk, yeast, salt, natural vanilla extract, bitter almond extract, and melted butter/coconut oil.
- Gradually pour in the almond flour and mix until you get a thick and slightly grainy cake dough.
- Pour the batter into the buttered cake pan and sprinkle with the slivered almonds.
- Lightly press the almonds into the dough so that they stick to the top.
- Bake for about 40-45 minutes on the middle oven rack. I recommend covering the cake pan with a large piece of aluminum foil after 25 minutes to prevent the top of the cake from burning.
- After 30 minutes, insert a toothpick in the center of the cake; if it comes out almost clean, the cake is ready.
- Let the cake cool on a rack until completely chilled.
- Sprinkle the powdered erythritol on top of the cake.
