“Good things come in small packages” is definitely true for Chia seeds! These tiny seeds are packed with omega-3 fatty acids (more than flaxseeds!) as well as fiber, antioxidants, and minerals.
If you’re already a bootcamper, you know how much I love antioxidants. And those found in chia seeds help fight free radicals in your body, which means you’ll be feeling lighter, less stressed, and more energized!
Whether you’re following LeBootCamp or my KetoSmart® program, this delicious breakfast/dessert/snack checks all the nutrition boxes!
Ingredients (serves 2):
- 1 cup macadamia milk (or almond, your choice)
- 1 tbsp monk fruit powder or erythritol
- 4 tbsp chia seeds
- 1 tbsp vanilla extract
- Optional: ground cinnamon
Directions:
- In a large bowl, mix all the ingredients together well with a fork. Let stand at room temperature for 10 minutes.
- Re-mix the ingredients so that the chia seeds don’t settle at the bottom of the bowl. Wait another 10 minutes.
- Transfer the mixture to serving cups and refrigerate for 12 hours before serving.
- Garnish according to your imagination! Berries, nuts, spices, cinnamon sticks, you name it.
