This week, join me for a recipe that is simple and fun to make with your kids :). Hey, if you’re entertaining little ones through the long Thanksgiving weekend, this makes for a great family activity and a delicious, healthy snack!
I love these granola cups for their crunch, light coconut flavor, and the fact that you can fill them up with absolutely anything! My favorite filling is vegan yogurt topped with fresh berries, but you can easily turn these into a gourmet dessert by filling them with a scoop of ice-cream, sprinkles, and a little whipped cream!
Important note: let your granola cups cool down before removing them from the muffin tins or tray so that they harden completely and don’t crumble. And fill them with yogurt only just before serving so that they don’t soften.
You can make these several days in advance and keep them in an airtight container. With Christmas just around the bend, these are great to have at hand for a last-minute treat at your holiday party.
