This week, join me for a recipe that is simple and fun to make with your kids :). Hey, if you’re entertaining little ones through the long Thanksgiving weekend, this makes for a great family activity and a delicious, healthy snack!
I love these granola cups for their crunch, light coconut flavor, and the fact that you can fill them up with absolutely anything! My favorite filling is vegan yogurt topped with fresh berries, but you can easily turn these into a gourmet dessert by filling them with a scoop of ice-cream, sprinkles, and a little whipped cream!
Important note: let your granola cups cool down before removing them from the muffin tins or tray so that they harden completely and don’t crumble. And fill them with yogurt only just before serving so that they don’t soften.
You can make these several days in advance and keep them in an airtight container. With Christmas just around the bend, these are great to have at hand for a last-minute treat at your holiday party.
Ingredients:
- 12 oz granola (gluten-free or regular)
- 3 tbsp coconut sugar
- 3 tbsp coconut oil
- 1 egg
- Vegan yogurt
- Seasonal berries
- Using a fork, combine the granola, coconut oil, coconut sugar and egg together until well blended.
- Distribute the mixture into greased muffin tins, pressing it neatly around the sides to form a small cup.
- Bake for 15 minutes at 350°F / 180°C.
- Let the granola cups cool so that they harden completely.
- Remove from the muffin tins and set aside until serving time.
- Fill your granola cups with yogurt of your choice and fresh berries.
