For a cozy morning at home, or a smart afternoon snack, check out this easy Buddha bowl recipe with chia seeds, banana and pollen!
Ingredients for 1 person:
- 1 cup almond or coconut milk (or any vegan milk)
- 3 tbsp chia seeds
- 5 drops of vanilla extract
- 1 tbsp honey or agave for vegans
- 1 banana, sliced
- 1 tbsp sliced almonds
- 1 tbsp pollen (omit for vegans)
- 1 tsp of grated coconut
Directions:
- Combine the vegan milk and vanilla extract in a blender at medium speed.
- Add the chia seeds and mix at low speed for 15 sec (that’s my secret to getting the chia seeds well distributed).
- Transfer to a bowl and mix with a whisk. Wait 5 mins and whisk again. Repeat.
- Let sit for 1 hour.
- Place in a serving bowl, then add the sliced banana, sliced almonds, grated coconut, honey and pollen.
