If you still think that you need the real stuff (sugar) in your sweets to satisfy your sweet tooth, think again!
I have exploring the keto world for the past few months and while I do not suggest one should follow a strict 90% fat ketogenic diet (I will explain why soon) I like the fact that by creating keto recipes one can eat less sugar.
Here is my brand new yummy keto vanilla cookies recipe, which I have been tweaking for the past few weeks. I hope you will like it!
Ingredients
- 4 oz room temperature butter (or the vegan version)
- 2 tbs room temperature cream cheese (or the vegan version)
- 1/4 cup monk fruit or other sweetener
- 1 egg white
- 2 tsp vanilla extract
- 1.5 cup almond flour
- 1/4 tsp salt
Steps
Preheat oven at 350F.
Line a cookie sheet with parchment paper. Oil the paper or use melted butter.
Beat butter, cream cheese and sweetener using a hand mixer until fluffy and lighter in color. Brace yourself as this will require at least 2 minutes of beating.
Add vanilla extract, egg white, and salt.
Using a large spoon, mix in the almond flour little by little. Make sure the end texture is as homogenous as can be. The dough will be pretty dense and crumbly but what matters is that it sticks when pressed together.
Using a small ice cream scoop transfer small balls of dough to the cookie sheet. Flatten the top using the spoon or simply your fingers and give a nice round shape to your cookies.
Bake for 15 minutes or until the edges become golden.
Take out of the oven AND DO NOT TOUCH until totally cooled down. Until then your cookies will be wobbly and brittle.
