A new recipe creation loosely based on the Eton mess, a typical British dessert that owes its name to the Eton College.
Eton mess is indeed a traditional English dessert consisting of a mixture of strawberries, pieces of meringue, and cream. The reason it’s called Eton mess, is because it’s traditionally served at Eton College’s annual cricket game against the pupils of Harrow School.
Mine is compatible with a KETO diet, and with all my LeBootCamp Nutrition & Weight Loss Coaching phases: DETOX, ATTACK, BOOSTER, MAINTENANCE.
Ingredients:
- 2 large egg whites
- 120g monk fruit
- 500g strawberries, sliced
- 450ml double cream or vegan equivalent
- Optional: cream of tartar to help whip egg whites
Steps:
- Heat oven to 120°C / 248°F and line a large baking tray with parchment paper.
- Whisk the egg whites and the cream of tartar until they reach stiff peaks, then add the “sugar” in 3 lots, re-whisking to stiff peaks every time.
- Spoon dollops of the mixture onto the parchment paper (shape does not matter as you will break it later on) and bake on the bottom shelf of the oven for 1hr – 1hr 15 mins until the meringues are completely hard and come off the paper easily. Set aside to cool.
- In a large bowl, whisk the cream until it holds its shape.
- Roughly crush ¾ of the meringues.
- Place strawberry slices on the inside of transparent jars/ramekins. Add a dollop of cream, then the crushed meringues, and more cream. Finish off with a few strawberry slices, and more meringue if you like it. Let your creativity express itself!
