Start your meals with liquid: you may have noticed that a lot of my LeBootCamp meal suggestions begin with a drink, a boost or a soup. Indeed, starting your meal with a liquid helps you fill up more quickly and thus eat smaller portions during the rest of your meal.
Smart, hey? Soup provides a maximum of energy with a minimum of calories!
A tasty blend of vegetables, aromatic herbs and spices, soups are a real pleasure for your taste buds…and for your waistline! What’s more: minimum preparation, maximum pleasure!
Rich in fiber, soups satisfy you right from the beginning of the meal while providing vitamins and antioxidants which are essential to the proper functioning of our body.
Hot, cold, spicy, detoxifying, or sweet, you can enjoy soups all year round!
Winter soups are obvious, but what about summertime?
In warm weather seasons, we need to stay well hydrated. Here’s when soup, with 90% water content, can be your perfect ally against dehydration! For maximum freshness opt for cold soups like cucumber soup and melon soup, and of course all types of gazpachos.
Get creative and make your soups unique! Add interesting herbs, dried fruit, new spices, vermicelli, wild mushrooms…the options are endless!
Enjoy this Purple Cabbage Gazpacho recipe, compliments of LeBootCamp 🙂
Ingredients: (serves 6)
- 1/4 purple cabbage
- 1 Granny Smith apple
- 1 cup of pure apple juice
- 1/2 cup of soy cream
- 1/4 tsp cinnamon
- Fleur de sel
- Freshly ground pepper
Directions:
- Wash and dry the cabbage. Cut into strips.
- Set aside 1/4 of the apple and squeeze some lemon juice over it to prevent it from browning. Then finely dice the rest of the apple.
- In a blender, blend the cabbage, diced apple and the apple juice.
- Season with salt and pepper.
- Whip the soy cream to obtain a foamy texture.
- Add the cinnamon to the soy and gently combine with the blended cabbage mixture.
- Cut the remaining apple quarter into small cubes.
- Distribute the apple cubes into 6 verrines, and then fill each one with the cabbage gazpacho.
- Sprinkle a pinch of pepper and fleur de sel on top of each one and serve right away.
